Skillet Zucchini

  • 3 T olive oil
  • 2 med size zucchini, 1 yellow, 1 green
  • 2 med onions
  • 3 cloves garlic
  • fresh mushrooms, sliced
  • salt, pepper, oregano, basil (to taste)
  • 8 oz. Tomato sauce
  • Mozzarella cheese

Sauté zucchini, onions, garlic and mushrooms until tender. Add 8 oz. Tomato sauce. Continue to cook about 5 more minutes. Melt Mozzarella cheese on top.

Serve by itself or over pasta.
